This dried apricot yogurt parfait layers creamy yogurt, crunchy granola with subtly sweet dried apricots, resulting in a nutritious, easy-to-make treat that's perfect for breakfast or a midday snack.

Ingredients

  • 1 cup plain Greek yogurt 
  • 1/2 cup of your favorite granola
  • 1/2 cup Mariani Dried Apricots, chopped
  • 8-10 fresh mint leaves, julienned 
  • Optional: a drizzle of honey or agave syrup for added sweetness

Instructions

  • Start with two clear glasses or mason jars and add a layer of Greek yogurt into the bottom of each glass.
  • Sprinkle a layer of granola over the yogurt, followed by a layer of chopped apricots.
  • Repeat until you have two to three complete layers of yogurt, granola and apricots.
  • Finish with a few julienned mint leaves and a drizzle of honey, if desired.
  • Best if served immediately.
