Apricot Almond Crunch Salad
Ingredients
- 6 cups of a variety of leafy salad greens, such as arugula, frisée, spinach, mâche, or soft-stemmed herbs like parsley, dill or chervil
- 1 cup Mariani Dried Apricots, sliced
- ½ cup sliced toasted almonds
- ¼ cup thinly sliced red onions
- ¼ cup crumbled feta cheese
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- To make the dressing, whisk together the extra-virgin olive oil, balsamic vinegar and honey in a small bowl. Season with salt and pepper and set aside.
- In a large bowl, toss together the mixed greens, sliced Mariani dried apricots, toasted sliced almonds, thinly sliced red onions, and crumbled feta cheese. Drizzle the vinaigrette over the salad and toss until evenly coated. Serve immediately and enjoy.
