Ingredients

  • 1 cup all-purpose flour
  • 1 ½ cups rolled oats
  • ½  teaspoon baking soda
  • ¼  teaspoon salt
  • ½  cup unsweetened applesauce
  • ¼  cup coconut oil, melted
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½  cup dark chocolate chips (at least 70% cacao)
  • 3/4 cup Mariani prunes, chopped

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, rolled oats, baking soda, and salt.
  • In another bowl, mix the applesauce, coconut oil, brown sugar, egg, and vanilla extract until well combined. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the dark chocolate chips and chopped dried prunes.
  • Drop tablespoon-sized scoops of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart and bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  • Allow the  cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
