Ingredients

  • 1 cup Mariani California Raisins
  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon orange zest (freshly grated)

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper.In a large bowl, beat the butter, brown sugar, and granulated sugar until creamy and light in color.
  • Mix in the egg, vanilla extract, and orange zest until fully incorporated.In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Fold in the Mariani California Raisins.
  • Scoop tablespoon-sized portions of dough and place 2 inches apart on the prepared baking sheet.
  • Bake for 10–12 minutes, or until the cookies look set and slightly puffed. The centers will remain soft.
  • Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
