Sunshine Raisin Cookies

Ingredients
- 1 cup Mariani California Raisins
- ½ cup (1 stick) unsalted butter, softened
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1¼ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ teaspoon orange zest (freshly grated)
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.In a large bowl, beat the butter, brown sugar, and granulated sugar until creamy and light in color.
- Mix in the egg, vanilla extract, and orange zest until fully incorporated.In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the Mariani California Raisins.
- Scoop tablespoon-sized portions of dough and place 2 inches apart on the prepared baking sheet.
- Bake for 10–12 minutes, or until the cookies look set and slightly puffed. The centers will remain soft.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
