Rustic Cranberry Muffins

Ingredients
- ¾ cup Mariani Sweetened Organic Cranberries
- 1 ¾ cups all-purpose flour
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ cup unsalted butter, melted
- 2 large eggs
- ½ cup plain Greek yogurt (or sour cream)
- ½ cup milk
- 1 teaspoon vanilla extract
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 375°F and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk together the melted butter, eggs, Greek yogurt, milk, and vanilla extract until smooth.
- Gradually fold the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the Mariani Sweetened Organic Cranberries, reserving a few for topping.
- Divide the batter evenly among the muffin cups, filling each about ¾ full. Press a few extra cranberries on top for a bakery-style look.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let cool slightly, then dust with powdered sugar for a finishing touch.
