Bento Box Bliss
Ingredients
- 3-4 pieces of chopped Mariani Dried Mangos
- 3 MINI RICE BALLS
- 1 cup of cooked rice, cooked using coconut water and cooled to room temperature (any short to medium grain)
- 2 tablespoons coconut cream
- 2 tablespoons of Mariani Dried Mangos, finely chopped
- A pinch of salt
- 3 CUCUMBER ROLL-UPS
- 1 cucumber, thinly sliced lengthwise
- 2 tablespoons of cream cheese
- 3 MINI SANDWICHES
- 2 slices of whole wheat bread
- 2 slices of turkey
- 2 slices of cheese
- 2 lettuce leaves
- Mayonnaise or mustard to taste
Instructions
- Mix the cooked rice with coconut cream, chopped mango and a pinch of salt. Use your hands to shape the rice form a ball. Repeat to make three mini rice balls.
- To make the cucumber roll-ups, spread a thin layer of cream cheese on each cucumber slice.
- To assemble the mini sandwiches, cut the crusts off the whole wheat bread and spread a light layer of mayonnaise or mustard.
- Layer the turkey slices, cheese slices, and lettuce leaves on one slice of bread. Top with the other slice of bread and cut into three mini sandwiches – perfect for little hands!
- When packing the lunchbox, arrange the mini rice balls, cucumber roll-ups, and mini sandwiches in separate compartments of the bento box.
- Add the extra Mariani Dried Mangos as a sweet snack.
