No-Bake Date Granola Bites
Ingredients
- 1 cup Mariani Organic Dates (175 g)
- ¼ cup almond butter or peanut butter (60 g)
- ½ tsp vanilla extract (2.5 ml)
- Pinch of sea salt
- ½ cup granola, lightly crushed (50 g)
- ¼ cup chopped almonds or walnuts (30 g)
- ¼ tsp ground cinnamon, optional
- 1 tbsp honey or maple syrup, optional (15 ml)
- Extra crushed granola or oats, for coating, optional
Instructions
- Add the dates to a food processor and blend to a sticky paste.
- Add nut butter, vanilla, and salt. Blend until the mixture clumps.
- Transfer to a bowl and stir in granola, nuts, cinnamon, and honey or maple if using.
- Scoop about 1 tbsp per bite and roll into balls. Roll in extra crushed granola or oats, if you like.
- Chill 15 minutes to firm up, or enjoy right away.
- Add a touch: Mix in 2 tbsp mini chocolate chips for a dessert-leaning batch.
