Ingredients

  • 1 cup Mariani Organic Dates (175 g)
  • ¼ cup almond butter or peanut butter (60 g)
  • ½ tsp vanilla extract (2.5 ml)
  • Pinch of sea salt
  • ½ cup granola, lightly crushed (50 g)
  • ¼ cup chopped almonds or walnuts (30 g)
  • ¼ tsp ground cinnamon, optional
  • 1 tbsp honey or maple syrup, optional (15 ml)
  • Extra crushed granola or oats, for coating, optional

Instructions

  • Add the dates to a food processor and blend to a sticky paste.
  • Add nut butter, vanilla, and salt. Blend until the mixture clumps.
  • Transfer to a bowl and stir in granola, nuts, cinnamon, and honey or maple if using.
  • Scoop about 1 tbsp per bite and roll into balls. Roll in extra crushed granola or oats, if you like.
  • Chill 15 minutes to firm up, or enjoy right away.
  • Add a touch: Mix in 2 tbsp mini chocolate chips for a dessert-leaning batch.
