Dried Cherry Salsa
Ingredients
- 1 cup Mariani Dried Cherries
- ½ cup hot water
- ½ cup finely chopped red onion
- 1 cup finely chopped red bell pepper
- 1 jalapeño pepper, finely chopped (seeds removed for less heat)
- ¼ cup chopped fresh cilantro
- Juice of 2 limes
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Place the dried cherries in a bowl and cover with hot water. Let them soak for about 10-15 minutes until they are plump and rehydrated. Drain and roughly chop the cherries.
- In a large bowl, combine the chopped cherries, red onion, red bell pepper, jalapeño pepper, and cilantro. Set aside.
- In a small bowl, whisk together the lime juice, apple cider vinegar, honey, salt, and black pepper.
- Pour the dressing over the cherry mixture and toss well to combine. Adjust seasoning to taste if necessary.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Serve as a topping for hotdogs, grilled meats, tacos and more!
