Ingredients

  • 1 cup Mariani Dried Cherries
  • ½ cup hot water
  • ½ cup finely chopped red onion
  • 1 cup finely chopped red bell pepper
  • 1 jalapeño pepper, finely chopped (seeds removed for less heat)
  • ¼ cup chopped fresh cilantro
  • Juice of 2 limes
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Place the dried cherries in a bowl and cover with hot water. Let them soak for about 10-15 minutes until they are plump and rehydrated. Drain and roughly chop the cherries.
  • In a large bowl, combine the chopped cherries, red onion, red bell pepper, jalapeño pepper, and cilantro. Set aside.
  • In a small bowl, whisk together the lime juice, apple cider vinegar, honey, salt, and black pepper.
  • Pour the dressing over the cherry mixture and toss well to combine. Adjust seasoning to taste if necessary.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.
  • Serve as a topping for hotdogs, grilled meats, tacos and more!
