Sunburst Mixed Fruit Summer Pie
Ingredients
- 1 ½ cups Mariani Dried Mixed Fruit
- 1 ½ cups boiling water
- 1 tablespoon lemon juice
- ½ cup sugar
- 2 tablespoons cornstarch
- 1 prepared pie crust (store-bought or homemade)
- 1 egg, beaten (for egg wash)
- Powdered sugar for dusting
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the dried fruit with boiling water and let soak for 10 minutes. Drain and set aside.
- In a saucepan, mix together the soaked dried fruits, lemon juice, sugar, and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens, about 5 minutes. Remove from heat and let cool slightly.
- Roll out the pie crust and place it into a 9-inch pie dish. Trim any excess dough.
- Spoon the cooled fruit filling into the pie crust, spreading it evenly.Fold the edges of the pie crust over the filling, creating a rustic border.
- Brush the crust with beaten egg for a golden finish.
- Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown.
- Allow the pie to cool before slicing and serving.
- Dust with powdered sugar and serve!
