Grilled Salmon with Tropical Pineapple Salsa
Ingredients
- 4 salmon fillets (about 6 ounces each)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup Mariani Dried Tropical Pineapple, finely chopped
- 1 small red bell pepper, diced
- 1 small red onion, finely chopped
- 1 jalapeño pepper, seeded and minced
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Preheat the grill to medium-high heat.To make the tropical salsa, combine the dried pineapple, red bell pepper, red onion, jalapeño pepper, cilantro, and lime juice in a medium bowl. Mix well to combine and set aside.Season the salmon with salt, pepper, and olive oil. Grill the salmon for 4-5 minutes per side, or until cooked through and flaky.Serve the grilled salmon topped with a generous spoonful of the tropical pineapple salsa.
