Prune, Walnut & Goat Cheese Salad
Ingredients
- 1 cup chopped Mariani Probiotic Prunes
- 2 cups mixed salad greens (like spinach, arugula, and romaine)
- ½ cup walnuts, roughly chopped
- ½ cup crumbled feta or goat cheese
- ¼ red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- Salt and pepper, to taste
- Fresh herbs (like parsley or mint) for garnish
Instructions
- Wash the salad greens and pat them dry. In a small bowl, make the dressing by whisking together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined. Set aside. In a large bowl, combine the salad greens, chopped prunes, walnuts, and red onion. Drizzle with the dressing and toss gently to coat. Sprinkle the salad with crumbled feta or goat cheese.Garnish with fresh herbs and serve immediately.
