Ingredients

Salad
  • 1 cup chopped romaine lettuce
  • 1/2 cup chopped bell peppers, any color
  • 1/4 cup chopped Mariani Dried Mango
  • 1 chopped scallion
  • 1 tablespoon chopped peanuts
  • 1 tablespoon crunchy rice noodles
  • 1/4 cup Thai Peanut Salad Dressing (see recipe)
Thai Peanut Salad Dressing
  • 1/4 cup chunky peanut butter
  • 2 tablespoons soy sauce
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 1 tablespoon lime juice
  • 1/2 tablespoon toasted sesame oil
  • 1 teaspoon apple cider vinegar

Instructions

Salad
  • 1. Chop the romaine lettuce, bell peppers, Mariani Dried Mango, scallion, and peanuts. 
  • 2. Add all the chopped ingredients to a bowl. Top with crunchy rice noodles and prepared salad dressing. Toss and enjoy! 
Thai Peanut Salad Dressing
  • 1. In a measuring cup, heat up peanut butter, soy sauce, water, and brown sugar. Heat it in the microwave in 30-second increments until it’s all mixed together. Add the rest of the dressing ingredients, stir, and then chill in the fridge until you’re ready to use it.
